This was my starter yesterday, and it tasted great!

shopping list for 4:
2 sea brass filets
half a collieflower
almonds (100 gr)
Hazelnutoil
and the ingredients for a classical white wine sause, which i am not gonna write, too classical, yo will find it in any good cooking book, and somewhere else on my blog :-)
Slice the collieflower really small and cook till soft, then cut it even smaller, mash your almonds small and mix. Add some hazelnutoil to make smooth. Season.
Fry your seabrass, put a little olive oil in the pan, heat it till really hot.
Place the seabrass on the skin and don't move! for about 3 min. Then turn for 30 sec and ready.
Place the brass on top of the collieflower, add the sause and enjoy!
I drank a white wine with it, albarino, al really nice wine for this dish, starts soft and sweet and ends with al little freshness. It is a wooded wine, but really really soft!

am now a big fan of albarino. i fear it's becoming very popular here in London. i was at a great little restaurant called clos maggiore and the price for a glass was at least 30% more expensive than a decent french. pity.
Anyway. i have received the fattoria la vialla catalogue. wow. what wonderful stuff. thanks for the recommendation.
